The symbol of the Original Sin and thus Dust. “Sin” is also its primary meaning on the alethiometer. For Will and Lyra the apple is replaced by a similar little red fruit from the Mulefa's World.

The apple symbolises the fruit of the Tree of Knowledge in the Garden of Eden.
