A confection made of almond paste, egg whites and sugar. This is partly how Mary Malone found her first love. The story of that incident is the keystone of her role as "the Serpent" in tempting Lyra and Will. Marzipan is known as "Marchpane" in Lyra's world. This is an example of esoteric renaming.
