I think the name "New Denmark" refers to the Norse settlement(s)that were attempted in North America such as L'Anse aux Meadows taht were attempted in the Middle Ages. (Greenland was a Danish possession until quite recently). The Anglo-Saxons commonly referred to teh Norse as "Danes" with the portion of Britain that they conquored being the "Danelaw" and teh ransom teh English paid to avoid further attacks being the "Danegeld". I think in Lyra's world, the Norse settlments were a success (perhaps better relations with the "Skraelings") and they beat the other European powers to colonizing North America.

As an aside, don't forget that the Virgin Islands were a Danish colony until the US prchased them in 1917 and that Sweden (a superpower from the days of Gustavus Adolphus until Charles XII had his tail hande to him by the Russians at Poltava) established a colony in western New Jersey taht was later absorbed by the Dutch and, in their turn, the British.
